Giorgio Paratici

Chef
Piacentino DOC, class of ’93, born in Castel San Giovanni and raised on the family farm, he has been passionate about vegetable gardens and good food since early on. After attending hotel school, he worked at restaurants in the area learning the culinary traditions of his land. After an ‘experience in Scotland in St. Andrews he returned to Italy and realized he wanted to deepen his culinary knowledge and decided to attend “Alma the international school of Italian cuisine.” From here began a period of continuous experience between Veneto and Friuli Venezia Giulia where he worked at such starred establishments as: Locanda San Lorenzo, Laite, Feva and Calandre.

Sara Frellicca

Chef
Tuscan DOC, born in Arezzo, class of ’97, she grew up from an early age around pots and pans, in a family where cooking has always been a centerpiece of conviviality. She decided to follow her dream by attending the hotel institute, giving her the opportunity to work in renowned establishments in the Arezzo area. She later attended ” Alma the international school of Italian cuisine,” and it was here that the adventure in haute cuisine began for her, frequenting restaurants such as La Palta, Feva and Piazza Duomo.

Melissa Bertoni

Maître d’ For her, the art of hospitality is all about listening, timing and small gestures that make all the difference. Melissa is the bridge between the kitchen and the customer: always smiling, attentive and precise. With natural elegance, she coordinates every moment of the experience with care and discretion, making each guest feel like a VIP.

Edoardo Bosi

Sommelier Born in Lodi but with his heart in Piacenza, Edoardo embodies a genuine passion for wine that is deeply rooted in the land and tradition. Ever since his days at agricultural college, he has chosen with care and dedication to further his studies in viticulture and oenology, attracted by a world as vast as it is fascinating, where every bottle is a journey and every glass tells a story. Growing up in close contact with the family farm, Edoardo learned the value of patience, care and respect for nature. Today, he brings the same spirit to the dining room: constant research, contagious enthusiasm and a sensitivity capable of creating pairings that enhance our cuisine, giving guests authentic and memorable sensory experiences.
